Smashed avo & tomatoes on sourdough

What better way to start the day than with some good old avocado on toast?! This is actually a personal favourite lunch option of mine, although it too makes a very good breakfast. Simple yet satisfying , the appeal of avo on toast, for me, is how quickly I can throw it together if I’m short of time. This balanced meal provides good fats (avocado), carbs (sourdough bread) and protein (feta, or try it with smoked salmon!) to keep you going on a busy day. The combo of avo and tomatoes topped with feta, I have to admit, got me hooked. So I do recommend giving this a go - for an easy, delicious and nutritionally balanced lunch!

EQUIPMENT
small bowl
sharp knife

toaster
INGREDIENTS
1 ripe avocado
50 g feta
2 thick sourdough slices
2 large tomatoes
pinch of salt
1 tbsp of lemon juice
grind of pepper
INSTRUCTIONS
Cut the avocado in half, lengthways and remove the stone
Cut the flesh of the avocado into criss-cross lines and remove the skin
Add the avocado chunks into the bowl and mash with a fork
Slice and dice the tomatoes roughly into smaller pieces
Pop the sourdough slices into the toaster
Whilst the bread is toasting, add the tomatoes in with the avocado and mash
Add the salt and lemon juice and mix
Once the sourdough is ready, top with the avo and tomato mix
Crumble over half the feta onto each slice with a grind of pepper
