Chocolate chip banana bread

My chocolate chip banana bread is a must try. If you have a sweet tooth and want to enjoy a piece of cake that is moist and moreish but also nutritious, you're in the right place! This banana bread is easy to make and contains less sugar than your average cake, plus more fibre.  It's a great bake for busy weeks when you need a healthy but delicious satiating snack to grab on the go. It also works as a dessert, served with greek yoghurt, seeds & berries (as pictured). The bread will last around 5 days if stored in an air tight container. Enjoy!


PREP TIME: 10 minutes

COOK TIME: 45 minutes

TOTAL TIME: 1 hr 10 (inc cooling time)

SERVINGS: 10-12


INGREDIENTS


  • 215g plain flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 360g mashed ripe banana (weigh the flesh) (approx 3 large or 4 medium bananas)

  • 165g light brown sugar

  • 2 large eggs

  • 56g unsalted butter, melted

  • 1 tsp vanilla extract

  • 115g dark chocolate chips


INSTRUCTIONS

 

  • Preheat the oven to 180 degrees (fan).

  • Line a loaf tin (8.5x4.5-inch or  9x5-inch) with baking paper, letting it hang about an inch above the sides.

  • Mash the peeled bananas until very smooth. Place mashed banana in a large mixing bowl.

  • Add the brown sugar and whisk until smooth and glossy.

  • Add the eggs to the mixture and whisk them until evenly incorporated.

  • Add the melted butter and vanilla extract and whisk to combine.

  • Whisk together flour, baking powder, baking soda and salt in medium bowl so it is evenly blended.

  • Add the dry ingredients to the banana mixture all at once and fold them in

  • Add the chocolate chips and mix through until the batter is uniform. Do not over-mix.

  • Scrape the batter into the prepared loaf tin and smooth it out, then run the spatula through the center lengthwise which will help it split down the middle as it bakes.

  • Bake for 45-50 minutes until the top is evenly browned and a skewer inserted into the center comes out clean despite any melted chocolate chips.

  • Let cool for 10 minutes, then turn out onto a wire rack to cool completely.
