Dark choc & peanut oat bites


These little snacks are delish! They’re so easy make, work really well as an afternoon pick me up, or can be popped into a lunch box as an on-the-go snack. These days, with a lot of misleading food marketing, it can be difficult to find lower sugar snacks in supermarkets that you can trust are genuinely a healthy choice. However, with a quick and easy recipe like this one, that is low in refined sugar and low cost, you’re on to a winner. These little beauties are ideal for home baking, make a great snack for kids and adults, and can be adapted to suit your taste. The raisins and chocolate drizzle will satisfy your sweet tooth, whilst the oats provide slow-release energy and the nuts are full of good fats – making them an all-round nutritious snack. Oat bites can be stored in the fridge or in a cool, dry place and last up to around 5 days – so make a great option for busy weeks when you need a healthy snack supply on hand. Enjoy!

EQUIPMENT


  • Baking tin

  • Large mixing bowl

  • Wooden spoon

  • Fork

  • Milk pan

  • Small glass bowl


INGREDIENTS

  

  • 240 g oats

  • 4 ripe bananas

  • 100 g raisins or other dried fruit

  • 100 g unsalted peanuts

  • 1 tbsp semi-skimmed milk or plant-based alternative

  • 100 g dark chocolate

  • 10 sprays fry light


INSTRUCTIONS

 

  • Turn the oven to 200 degree (fan)

  • Spray the baking tin with fry light (base and edges) and put aside

  • Add the ripe bananas to the mixing bowl and mash with a fork until soft

  • Add the oats, raisins and 3/4 of the peanuts to the bowl and combine

  • Once well combined, add the mixture into the baking tin and spread evenly

  • Pop the tin in the oven to bake for 25 minutes

  • Once baked, remove the tin from the oven and let cool

  • Meanwhile, boil a full kettle and break the dark chocolate into small squares and add to the small glass bowl

  • Fill the small milk pan with boiling water and place the small glass bowl above so the chocolate will melt

  • Stir the chocolate until completely melted

  • Meanwhile, roughly chop the remaining unsalted peanuts

  • Once the chocolate has melted, drizzle all over the cooked oats

  • Decorate by adding the remaining chopped peanuts on top

  • Pop the oat bite mixture into the fridge for 1-2 hours until chocolate turns solid

  • Finally, cut the baked oats into bite size squares & enjoy!


NOTES

Oat bites will last up to 5 days in a sealed container stored in the fridge or a cool dark place
